ASU Athletic Complex


Meredith Williams, co-owner of Pepper Moon Catering, received a call from the owner of The Red Onion Café in Boone, NC.  That call was to gather information about the degree to which Pepper Moon caters - do we do small private home parties? Or, do we do large events?  The answer was “Pepper Moon does both, and everything in between!”  Meredith worked at The Red Onion while she was a student at Appalachian State University.  The owner of The Red Onion, Danny Mauney, had been asked to bid on catering in the newly-constructed section of the football stadium and Danny wanted to know if Pepper Moon would partner with The Red Onion.  Meredith and her partner Bill Schneider were up for the challenge!  Catering in approximately 15 areas on a golf course for the Wyndham Championship, formerly GGO, and catering around 35 areas in the city of High Point for Furniture Market, they felt very confident in catering 18 different luxury suites on the 6th floor of the new Athletic Complex!  After visits to the new stadium and conversation between Meredith, Bill and Danny they decided to form a partnership and put in an official bid. 

Within a couple of weeks Pepper Moon/Red Onion received confirmation that they had been awarded the ability to handle catering on the 5th floor Club Level and the 6th floor Suite Level at the Athletic Complex!  The real work began:  determining the procedures to make a partnership-over-distance work and determining the menus to be offered to the suite holders, as well as creating an upscale concessions menu for the 5th floor.  After conversation with the suite holders and season ticket holders menus were created and approved by the Athletic Department. 

Not only did the Mountaineers have a great win against McNeese State in the first home game in the new Athletic Complex but also the catering service went off without a hitch!  The partners were thrilled with the planning that proved to be correct and efficient, and the procedures created during that first game are still being followed after two years, and two conference winning football seasons by App State.

Meredith, Bill and Danny have created an upscale atmosphere that focuses on providing a level of service not available prior to their work in Boone.  Their goal has been to train Appalachian students to provide a professional level of service for the Club Level and Suite Level donors, and to maintain the tradition of sincere Southern Hospitality on the mountain.
